Actually the carbonara is not born with guanciale, but it makes it definitely more delicate. I also like it with smoked bacon, actually. I'm glad you're interested in cooking x) is one of my passions!

No prob at all, take your time! Yep yep, it's addictive! My recipe requires a little higher proportion of egg yolks, parmesan, a drop of milk; crispy guanciale, a ladle of cooking water towards the end, and a generous sprinkling of black pepper! ^^ Hahah, seems he posted -
