After initially hatching, Calliopes have no musical sense whatsoever. But, for whatever reason, they can see musical staffs floating by through the ether of island. As their brains slowly grow and develop, they naturally acquire the ability to read and play music.
Finally, once fully evolving, they can hop on a full instrument—the organ—and play whatever song is placed in front of them. They're best suited for playing carnival-style and whimsical numbers and aren't very good at playing classical music.
