Although no, I'm not leaving the egg whites in the fridge. Maybe that's the issue, I've never heard of letting them sit like that. But I also think it might just be the oven- I did a batch with just 4 cookies first cause I had leftover batter, and those 4 turned out pretty good--

No, we don't have an oven thermometer, I just go off the display. We know that the temps of it can be a bit wonky, but usually if we add 2 mins to any recipe times it's fine. I can send you a pic of the 2 recipes I've done, see if you're weirded out by anything in them XD ----

Okay, so the ganache turned out good, but I'm so frustrated with my oven x_x I baked the macarons for 19 minutes, and they're still slightly underbaked????? Gonna up it to 20-21 minutes next time, but it's ridiculous since most recipes just say 14 mins. >:[

Awesome x) What's your process for doing it? I'm going to attempt to make some for my macarons, but what I'm reading in my cookbook goes against some video guides I'm watching. The book says I should heat the heavy creamer first then add chips to melt, but videos are saying---
