Rely on soaked cashews and silken tofu (nut and soy alternatives mentioned) to make the best vegan eggnog! It’s thick, creamy, rich, sweet, and full of warming spices.

Ingredients

πŸ₯› Β½ cup of cashews
πŸ₯› Β½ cup of silken tofu
πŸ₯› 2 cups of plain soymilk
πŸ₯› 2 Β½ tablespoons of granulated cane sugar
πŸ₯› 1 Β½ teaspoons of vanilla extract
πŸ₯› 1 teaspoon of cinnamon
πŸ₯› ΒΌ teaspoon of nutmeg
πŸ₯› β…› teaspoon of ground cloves
πŸ₯› β…› teaspoon of ground cardamom

Instructions

πŸ₯› 1. In a medium bowl, soak the cashews in water overnight (or for at least 4 hours). After they’ve been soaked, drain the water.

πŸ₯› 2. In a blender, blend together the soaked cashews, silken tofu, plain soymilk, sugar, vanilla extract, cinnamon, cloves, and cardamom.

πŸ₯› 3. Place the nog in the refrigerator and chill for 2 to 3 hours, stir, and serve cold.

Notes

πŸ₯› Tweak the ingredients: Adjust the amount of sweetener and spices, etc.

πŸ₯› For the creamiest vegan eggnog: Use creamy dairy-free milk like canned coconut milk, oat milk, or even a vegan β€˜creamer’ or β€˜barista’ milk.

πŸ₯› Soak the cashews properly: They need to be tender to blend super smooth. That’s why overnight soaking is best.

πŸ₯› To add color: Traditional eggnog is usually a creamy yellowish color. Add a tiny pinch of turmeric to mimic the color.

About Icestrom Eggs

Icestrom eggs are only found in blizzard-like conditions atop mountains greater than 3,000 meters tall. Blizzard conditions of cold winds and blowing snow actually provide it shelter from the sun above that would otherwise melt the egg before it hatches.

About the Icestrom Creature

Icestrom creatures live atop the coldest mountains in Ark and are known for being so massive that, when they move from one position to another, they look like giant avalanches. In fact, due to their largeness, Icestroms are generally the cause of avalanches.

Thankfully, no major residential hubs lie at the base of mountains that Icestroms inhabit. The potential for danger would be much too high.

Sometimes the sun, in the summer months, can cause Icestroms to shrink in size but they usually recoup all of their mass in the winter time.
