If you’re one of those people who can’t cook for life, then this recipe is for you. It’s one pan and some stirring. Can you believe it? It’s also one of those dishes that’s really impressive for a host of reasons!

First of all, it’s delicious. It’s a super creamy savory rice dish full of delicious flavors – what’s not to like? Second, it’s super versatile, so it makes it easily adjustable to your guest’s likes and dislikes. Perfect! Third, it’s super easy and quick to make! And fourth (as if we needed a fourth reason to love this recipe!), it looks fancy. Quadruple win!

Ingredients

🍚 1 tablespoon of neutral oil
🍚 ½ of a finely diced white onion
🍚 1 garlic clove
🍚 1 diced celery rib diced
🍚 ½ cup of mushrooms
🍚 1 cup of arborio rice
🍚 1 cup of pumpkin puree
🍚 2 cups of vegetable broth
🍚 ½ tablespoon of vegan butter
🍚 Salt, black pepper (optional)

Instructions

πŸ§„ 1. In a large pan over medium-high heat, heat the oil. Add onions, garlic, and celery and saute for 3 minutes. Add the mushrooms and cook for another 5 minutes.

πŸ§„ 2. Add the rice and the pumpkin puree. Start by gradually adding vegetable broth to the pan, one ladle at a time. This assures that the rice gives in all of its nice starch, which makes the sauce thicker.

πŸ§„ 3. When all the vegetable stock has gone in, the rice should be almost completely soft, but still with a little bite into it. Now add the vegan butter and take off the heat, optionally add salt and pepper. It should still have some sauce left, which makes your risotto creamy and delicious.

Notes

πŸ„ Set aside the time to properly cook the risotto. It’s not one of those dishes that you can get going and then step away from. It needs you to watch over it and stir almost constantly as it cooks.

πŸ„ Make sure you are making this with arborio rice. You won’t get the same creaminess from other types of rice.

About Kampos Eggs

This egg was given out for Creature Release Week in January of 2014.

The texture of Kampos eggs is a peculiar combination of both scaly and spongy. Even if the egg is removed from its aquatic habitat, the shell's unique ability to retain water helps to keep it hydrated for at least a week. Because of the rough and porous nature, it was discovered that discarded Kampos shells can be used as a fantastic household cleaning product.

About the Kampos Creature

Kampos can be found living in large swarms in the oceans around Ark. The spines on an adult Kampos's tail carry a stinging poison that is used in defense against predators. Kampos will only enter Ark bay once a year, for a week, to spawn. During this time Ark City officials will keep people from swimming in the Bay as getting stung by a Kampos can cause an allergic reaction that can potentially be fatal. So despite the rather small size of the Kampos, a Kampos swarm can be deadly.
