Ingredients

Yogurt

๐Ÿฆ 1 (14-ounce) can full fat coconut milk* (organic when possible, see below for brand recommendations // or sub light for thinner yogurt)
๐Ÿฆ 2 capsules vegan-friendly probiotic* (they need to be capsules, not pills, which have to be crushed, see below for recommendations // capsules can be easily opened and emptied)

Add-Ins (optional)

๐Ÿฆ Maple syrup, stevia, or agave nectar for sweetening
๐Ÿฆ Vanilla extract or vanilla bean powder
๐Ÿฆ Fruit or Fruit Compote

Instructions

๐Ÿฆ 1. Itโ€™s important to select a coconut milk thatโ€™s creamy and smooth (not grainy or clumpy) to ensure that the yogurt is creamy and smooth. Our favorite brands are: Savoy Coconut Cream, Aroy-D Coconut Milk, and Whole Foods 365 full fat (BPA-free). Native Forest Full Fat (BPA-free) isnโ€™t as creamy, but it still makes tasty yogurt. We would not recommend Trader Joeโ€™s (BPA-free), which was recently reformulated and is now chunky/grainy.

๐Ÿฆ 2. Shake your coconut milk well. Then open and pour into a clean, sterilized, dry glass jar or bowl. You can easily sterilize clean jars by rinsing throughly with boiling water and letting dry completely. Just let them cool back down to room temperature before adding ingredients. For jars, I like this one from Weck. Sometimes the coconut milk is separated, so after adding it to the jar, I stir with a whisk to get it completely smooth.

๐Ÿฆ 3. Empty your probiotic capsules (see brand recommendations below) into the yogurt and (important๐Ÿ˜Š use a wooden or plastic spoon to stir, not metal, as a metal spoon can react negatively with the probiotics. Stir until creamy and smooth, pushing the probiotic up against the side with your spoon to evenly disperse.

๐Ÿฆ 4. Cover the mixture with cheesecloth (or a very thin, clean dish towel โ€“ something that lets air in but keeps bugs out) and secure with a rubber band.

๐Ÿฆ 5. Let the yogurt activate for at least 24 hours and up to 48 hours (sometimes longer โ€“ 48 hours is my sweet spot for thickness and tang) in a warm place. The longer it rests, the tangier the yogurt will become. In warmer climates and summer itโ€™s easy to make yogurt if your house is warm (75 degrees F / 23 C and above). But in cooler climates or seasons, place the yogurt in the oven with the light on (do not turn on the oven), where it should have the right amount of heat to activate.

๐Ÿฆ 6. Thatโ€™s it! Once the yogurt has reached the right amount of tanginess and thickness for your liking (be sure to sample with a wooden spoon), cover securely with a lid and refrigerate until cold. Refrigerating will also thicken the yogurt even more, almost to a Greek yogurt consistency (depending on the brand of coconut milk you used)! For even thicker yogurt, line a fine mesh strainer with two layers of cheesecloth and set over a mixing bowl. Pour in the yogurt, then loosely cover with a lid or plastic wrap and let rest in the refrigerator overnight or for 12+ hours. It should thicken up quite a bit more.

๐Ÿฆ 7. You have coconut yogurt (!!), which can be enjoyed plain as I prefer it, with fruit, or even with Fruit Compote. You can also add a bit of sweetener or flavor at this point, such as maple syrup and/or vanilla extract.

๐Ÿฆ 8. Store covered in the refrigerator for several days (mine kept for 7 days). Youโ€™ll know itโ€™s gone bad when the smell is off-putting or there is mold.

Notes

๐Ÿฆ My go-to probiotic is Renew Life Ultimate Flora 50 billion. However, the company does not confirm whether or not it is vegan. So a good vegan option is Jarrow Probiotic 10 billion, which I tested with the yogurt and it worked well! Keep in mind, one bottle of probiotics can not only be used to make dozens of batches of yogurt, but can also be taken orally for good digestive health!

Homemade Soy Yogurt

Thick creamy soy yogurt that sets like a charm without any yogurt maker and is delicious! With only two ingredients, the process is much simpler than you think; you may never buy vegan yogurt again. Serve with your favourite toppings or add to smoothies and why not to curry sauces for that extra depth of flavour.

Servings - 5 (yield 1 litre of yogurt)

Ingredients

๐Ÿฆ 1 litre homemade soy milk (watch the video [see notes] or use unsweetened PLAIN soy milk with water and soybeans as the only ingredients like Edensoy [in Canada] or Westsoy [in the US])

Starter - 1st batch only

๐Ÿฆ 4 probiotic capsules with 25 billion CFU each or at least 5 capsules with 2.4 billion CFU each

All subsequent batches

๐Ÿฆ 120 ml plain yogurt from your last batch as a starter [1/2 cup]

Instructions

๐Ÿฆ 1. If using the oven for incubation, preheat it at the lowest temperature for 5 - 10 minutes.
๐Ÿฆ 2. Place the milk in a saucepan and bring to a boil.
๐Ÿฆ 3. Turn off and let it cool down to about 42C / 108F.
๐Ÿฆ 4. Open the probiotic capsules and sprinkle the powder onto the milk.
๐Ÿฆ 5. Whisk and stir until all powder is dissolved.
๐Ÿฆ 6. Pour the milk into clean pots and screw the lids on.
๐Ÿฆ 7. Tun off the oven and turn the light on (if it has a light bulb).
๐Ÿฆ 8. Place the yogurt pots in the oven or leave them in a warm (above 30C / 86F) undisturbed place.
๐Ÿฆ 9. Leave to ferment for about 8 hours.
๐Ÿฆ 10. The yogurt will be set by this time.
๐Ÿฆ 11. Transfer to the refrigerator.
๐Ÿฆ 12. Save 1/2 cup [120ml] of yogurt from this batch for the next one as starter, i.e. you don't need the capsules again for the next batch. You can use the yogurt from the last batch for each subsequent batches.
๐Ÿฆ 13. To serve, you may whisk the yogurt a little for a creamier texture and add sugar, maple syrup or other sweeteners of choice. You may add fruits as natural sweeteners.

About Ghostar Eggs

This egg was only given out for the Halloween Bash of 2011 (Year 3).

The face on Ghostar eggs changes depending on their particular mood, however their moods seem to only range from mildly happy to completely ecstatic. It's possible to raise one's mood just by looking at one of these eggs.

About the Ghostar Creature

The Ghostar is believed by many to be the offspring of the Ghosty, following its strange disappearance from the Cave. However, Ghostars are still shrouded in mystery. The Science and Research Center believes this to be a completely different species altogether and is launching a full investigation to discover the Ghostar's origin. Unlike the Ghosty, Ghostars love companionship and are often pampered by their owners. The only problem is that once a special bond is established, Ghostars never, ever want to leave their owner's side, resulting in many uncomfortable situations. Raising one is a long-term commitment!
