Because bamboo isn't exactly the best/most nutritious source of food, so they need to eat a lot to supply their body.

Because they are big creatures, and bamboo doesn't exactly have a lot of minerals or nutrients in it, so in order to get enough, they have to eat a whole bunch of it.
