How do you trade or give EC without also giving a junk egg?

No, it's actually quite possible, it just requires a couple trades to go back and fourth. All you have to do is trade back 😋 Example:
You wish to send 25,000 EC to User 1.

User 1 will set up a trade with an egg (for the sake of simplicity, let's say a Diablos). You will offer an egg (for the sake of simplicity, let's say a Caiman) + 25,000 EC. The trade will be accepted, then User 1 can set up a trade with the Caiman, and you can offer the Diablos that you received. You don't even have to use a junk egg, you can use any random creature in your cove for it and still get that creature back. You can also give users creatures the same way, but by replacing the EC with the creature you want to give away 😊

Unfortunately, this is too much work for most users, so it isn't a method that I use often, but it is certainly possible if you explain the process to the person you're trading with ^^
