What pets are considered rare?

Well, there are 200 species in eggcave, so I can't tell you what's rare. I can tell you what's uncommon or common though.
If it's found in the cave, it's common. There are exceptions. The mo and terron are uncommon. Also, during events, (check the blog,) there may be an LE (limited edition) in the cave for a short time. These are uncommon, and gain rarity the longer its been since it was in the cave. Uncommons are also from events during an event, like the Case of the Missing Kinump Seeds, which is over now. The last exception, creatures that are endangered, or retired. They come from the cave, but, one day, you can't get them anymore. They are currently, Macaw, Drakomo, Bunthoff, Aerlo, and Punbundu.
CS (Cash Shop) creatures are considered rare, especially since they cost real money, and are only out for one month.

How do you determine a trade value?

There are two parts to a trade value, demand and supply.
Supply is just how many there are. Search the name in the Archives, there should be a weighted rarity. This isn't all, though. CCs have a smaller weighted, (less of them,) but they aren't as rare as something like a tine.
Demand is the popularity. Most in demand are old. Like Tines or Onnies. To figure this out, check out the trade center, trade forum, and the archives. The archives should tell you when they were out, or taken out of being available. The site's only 3 years old, so they would be about 2 or 3 years old. The trade center and forum should not have many rares out.
Try to make estimations from those descriptions, and ask around too.
