I have a few creatures to suggest. My first one is an Andu.
The Andu comes is many colors and, according to the SAR center it colors will change slowly over its life cycle. The Andu are illusive rarely seen by the people living in Ark unless you happen to be living on a boat. The Andu thrives on fish and can even be seen in lakes hunting.

The egg itself has a sort of iridescent sheen to it as if it were a fine jewel. The Andu's eggs are typically no bigger that the Palm of your hand, and are extremely heavy. In the old days, kings and queens would keep the beautiful eggs and they would have them fashioned into jewelry, this quickly stopped however when the eggs began hatching three years later.
