What do items do?

This feels like a silly question but... what do items do? I know you can use them for quests, but it also seems like not every item might appear in the quest. All these items I'm getting from Ark Victory Day - what am I supposed to do with them? I feel like I'm missing something with the gameplay here.

@km9, for most of these items, it will either increase food stat or happiness! 😃
