🍦🌈 Rainbow Sherbet 🌈🍦

No-churn vegan rainbow sherbet ice cream with a naturally sweetened frozen fruit base. Just 7 ingredients required for this wholesome take on a classic summertime treat!

Ingredients

🍦 3 cups frozen mango chunks
🍦 1 cup frozen pineapple chunks
🍦 1/2 cup canned full-fat coconut milk (a smooth, creamy brand!)
🍦 1/4 cup maple syrup
🍦 2 Tbsp lime juice
🍦 1 tsp vanilla extract
🍦 1 cup frozen raspberries
🍦 1 cup tightly packed baby spinach (optional β€” exclude if you don’t want to use your blender)

Instructions

🌈 1. Line a loaf pan with parchment paper and leave enough overhang to cover the top of your sherbet later.

🌈 2. MANGO BASE: Place frozen mango and pineapple into a food processor and pulse until you achieve small shreds.

🌈 3. Scrape down the sides and add the coconut milk, maple syrup, lime juice, and vanilla. Mix again until the food processor begins to run smoothly, scraping down the sides as needed.

🌈 4. Once there are very few mango pieces visible, leave the processor on for at least 1 minute to achieve the creamiest consistency possible!

🌈 5. Remove about 2/3 of the mixture and place into the loaf pan. Place the loaf pan into the freezer while you proceed with the recipe.

🌈 6. RASPBERRY SWIRL: To the mango-pineapple mixture that remains in your food processor, add the raspberries and process until completely smooth.

🌈 7. GREEN SWIRL (OPTIONAL for tricolor appearance β€” doesn’t change the flavor): Remove the loaf pan from the freezer and add half of the mango/pineapple mixture to a blender with the spinach and blend until the spinach is completely incorporated. This step can also be left out and you’ll still have delicious swirled sherbet, it just won’t be β€œrainbow.”

🌈 8. Now layer the sherbet. Top the mango-pineapple layer with the optional green spinach layer and add the raspberry sherbet on top of the green (or directly on top of the mango-pineapple base if skipping the spinach). Give it a gentle stir to swirl the layers together slightly.

🌈 9. Cover the sherbet with the excess parchment paper and place into your freezer for at least one hour to firm up. We enjoy the texture best after 1 hour of freezing because it’s a little firm but not frozen solid; however, you can enjoy the sherbet before freezing if you don’t mind a soft-serve consistency!

🌈 10. If you let the sherbet freeze solid, remove it from the freezer and allow to thaw for 15-20 minutes until scoopable. It’s best eaten the day it’s prepared but will keep for up to 1 month!

About Sadly Eggs

This egg is surprisingly light despite feeling like it's made of solid wood! The purple liquid coating the top of the egg is said to be able to bring back any plant from the brink of death.

Sadly eggs can be found tucked into the roots of long dead trees, a bright shock of color amidst the gray and brown of fallen branches and decay. As the egg nears hatching, what sounds like soft crying can be heard from within as its liquid-like "leaves" consume every inch of the egg's surface entirely.

About the Sadly Creature

The legend of the Sadly, brought about by its human-like shape, is as old as Ark itself, but some say it's even older.

Long ago, a woman grew the most beautiful garden under the cover of the drooping leaves of her favorite willow trees. Vines and bushes grew inside of the garden with the most exquisite fruits and beautiful flowers of all colors. Each plant was lovingly tended to every day by the delicate hand of the Maiden who lived there. No matter the season, the magic of these willow trees provided protection from the harsh elements and the garden stayed green and overflowing all year long. Because of this, anyone in need was welcome inside to harvest, so long as they left an offering beside the Maiden's pond first and never took more than what was needed. It was said that if a tree were to be depleted entirely of the fruit it bore, it would shrivel and never again bloom.

One especially cruel night, the crops grown by the other inhabitants of the island were destroyed by frost. The leader of these people proclaimed that there was no need to worry and that they could take all they needed from the garden hidden amongst the trees. At once the people entered the gardenβ€”leaving no offerings to thank the Maiden for her generosityβ€”they became greedy and picked each and every piece of fruit they could find from the trees before returning to their homes.

The Maiden, seeing her beloved garden barren and reduced to nothing, sat beside the pond and cried. As she cried, the willows lent her their magic once again, turning her into the most beautiful willow of them all. Her leaves, however, dripped purple magic as steadily as the tears she cried. As her magic spread, it's believed that it was the reason Sadly eggs began to appear and that each creature is an extension of her and her sadness.
