@kevinblaster First: Egg Coins can be used to buy travels in the Travel Agency. Travels are backgrounds that you can add to your pets.
Second: You can use it at Tim's Food Shop to keep your creature's happiness at 100 for the time that they are booked there.
Third: You can use it in trades with other people to essentially buy pets from them.

Edit: Oh yes, and you can buy a Calla from the Science and Research Center.
