Calla Gender

Since the genetic reconstruction of calla has been "perfected", and gender is determined by genetics, why can't we choose the gender of our calla?

Well, you can't choose the gender of any other creature. I'm guessing you wouldn't be able to do this either or it wouldn't be fair...
