Why is everyone wanting to use the essence of lidsansce before their creatures evolve?

Moderately new to this all since I just came back, but people use freezes because they prefer a certain stage for their creature or to increase the rarity/ value of their creature. As time goes by there are naturally more last stage pets than egg or earlier stage ones, so frozen pets become more rare.
