Immortality

I don't have that great of an understanding about immortality, but I thought it was a creature that leveled past 2000?

I just got a notice that one of my creatures became immortal, but he's level 1996.

Your creature is past level 2000 in stats. The picture which shows the level doesn't update until the next day. You can refresh and that should also update the level.
