I have been having such a hard time being able to do quests. Is there any good tips?

My advice is focus on all of the quests one at a time, then only one type of quest multiple times.
not sure if that makes sense, So I'll try to clarify if it doesn't.

each quests has a 5 minute cool down, instead of waiting for the cool down of one quest like the Baking quest, to do another baking quest, just move on to a different quest like Going Global.

each quest surrounds a type of item thats can be available in NPC ran stores:

Baked Bun Quests = bakery
Going Global = Travel Agency
Gourmand Quests = General Food Store
Miserable Meltdown = Finley's Flavors
Speed Reading = Leila Library
Toybox Quests = Toy Shop

Each shop restocks every 10-15 minutes

If the NPC's Do not have the Item you need you can also go to the User shops

Or ask for specific items and send back items at Quest Items Swapping thread
