Vegan blueberry macarons are on my must-have dessert list, I’ve tried and tested these a couple of times over the years and it looks like the charm is on for a third time. When I think of France and desserts, I can’t help but think of macaroons. They are so delicate and crisp and perfect and even after the third try I still haven’t mastered them (just like the language, among other things that have been difficult to understand over the years). pretty good third try I’m right, and still so suitable for Mother’s Day around the corner!

Ingredients

🫐drained and cooled 300g aquafaba (chickpea brine)
🫐175g castor sugar
🫐175g icing sugar
🫐150g almond flour
🫐1/2 tsp cream or tartar
🫐Purple food colouring
🫐edible dust
🫐edible flowers

Blueberry compote

πŸ₯1 cup fresh blueberries
πŸ₯1 tsp lemon juice
πŸ₯2 tbsp maple syrup
πŸ₯pinch of salt

Icing

πŸ‹100g vegan butter
πŸ‹1 1/2 cup icing sugar
πŸ‹1 tsp lemon juice
πŸ‹1/2 tsp vanilla extract
πŸ‹Juice of the blueberry compote for colouring

Method

🫐1. Place the aquafaba and sugar in a saucepan and bring to a simmer for about 10-15 minutes on medium, this will let the mixture reduce to 280g so you can whip it up in to a glossy italian meringue.

🫐2. Let it cool before whipping up in a stand mixer, while out the mixer first with the some apple cider vinegar.

🫐3. Sift the icing sugar and almond flour, three to four times while whipping up the aquafaba meringue.

🫐4. Whip the aquafaba meringue for 10-15 minutes until glossy and when you turn the bowl upside down the meringue sticks, whisk in the food colouring and the cream of tartar.

🫐5. Fold in the almond flour and icing sugar with a spatula, in a form of an eight, for about 5 minutes until everything is combined and you reach the ribbon case (this is where you lift up the spatula and it gently rolls off like a ribbon).

🫐6. Scoop the macarons batter in to a piping bag with a round nozzle and make use of a bottle top to draw round shapes on a parchment paper line tray, so you pipe the same size macarons.

🫐7. Gently pipe the macarons until you almost reach the edges, leave about 2-3 cm between each macaron, lift up and drop the baking tray slightly to ensure there are no air bubbles, leave the macarons to dry out for 1-2 hours.

🫐8. Heat the oven to 120 degrees celsius, bake the macarons in the middle rack (one tray per baking time) for 30 minutes, remove to cool in the oven once baked.

🫐9. Cook the berry compote in a saucepan until jammy, add a bit of corn starch if the compote is too liquid, store in a glass container until frosting time.

🫐10. For the frosting, beat the room temperature vegan butter, sift in the icing sugar while whipping, then the vanilla and the salt and lastly fold in the blueberry compote (no lumps) for the color, scoop in to a piping bag with a round nozzle and keep cool so it does not melt and makes a mess everywhere.

🫐11. Once the macarons have cooled, search each right partner, pipe around the edges the frosting and add a dollop of the blueberry comport in the centre.

🫐12. Serve within a day or two of making, store in an airtight container for up to two days.

These creatures like to spend their time up in the air, whether that be a few feet off the ground or high in the sky to where you can't see them. Their frosty antlers glow, which help owners find them in the dark. Ceryneean are known for wanting to play hide and seek, even if they have an advantage of being able to be anywhere in the sky. These curious creatures are known for even floating while sleeping. Just toss a blanket on them and they are fine for the night.
