How often does the cave update it's species? Does it change often?

The creatures in the Cave do not change often except for the ones known as Cave Monthlies. Cave monthlies change monthly and are only available for that month.

The other species do not change often but do randomly change.

That's how many there are in the Archives as a whole. In the cave specifically, there have been 247 species and currently, there are around 56 species available to find.
