@wildfire4012 Brie is best with something more acidic like an apple or salad with dressing

Cheddar or Colby is much more tastier and texturally satistfying as a grilled cheese.

I have to agree with you about brie with apples yum. Yes cheddar and corby are best for grilled cheese sandwiches but I hate them so much.
