I am so glad that everyone is doing okay; recovering from illness' and making their way(s) to normalcy. I have been meaning to post here for the last few days but I get side tracked. I have been busy with work & catering and didn't have the gumption to post on all the walls today, but i did send treats to all your coves!!!

Can you believe it's almost April?

A Recipe for You All


GLUTEN-FREE Potato Green Bean Salad w Tarragon

Ingredients

3 pounds fresh new potatoes
1 pound gluten-free bacon
1 pound fresh green beans
1/2 cup thinly sliced green onions
1/4 cup finely chopped fresh parsley
1 teaspoon salt
1 teaspoon gluten-free dry mustard (see tips)
1 teaspoon dried, crushed tarragon leaves
1 minced clove garlic
1/4 cup tarragon vinegar
1/4 cup gluten-free chicken broth
1/2 cup light olive oil
Freshly ground pepper, to taste

Preparation:

Fry bacon until crisp and drain on paper towels. When cool crumble.

Slice unpeeled potatoes 1/4-inch thick and boil just until tender, but not soft, about 15 minutes. Drain. While potatoes are boiling, cut green beans into 2-inch pieces and steam for about 7 minutes, or just until tender.

Place cooked potatoes, green beans, sliced green onions and parsley in a large bowl.

In a medium bowl combine light olive oil, gluten-free chicken broth, tarragon vinegar, minced garlic, dried tarragon, dry mustard, salt and pepper. Whisk until combined.

Pour dressing over vegetables and use a large spatula to gently coat vegetables. Add crumbled bacon and gently combine.

Serve immediately at room temperature or chill.

@byfelisa - we are happy to take care of things while you cannot - at least we try when we can!! seems we all get very busy, but that is the main idea behind this group; to help fellow adults keep coves going. illness, work schedules, families and such just keep us all busy.

I'm am thankful for all of you and hope each of you had an awesome Easter in some way or another!! It's a time for rejoicing in the fact that the "Lord Has Risen" (if you're a believer) and a time for family dinners. I love to see that little girls dressed in their little dresses and cute shoes (but, I didn't see the bonnets, like when I was a girl). My mother dressed my sister & I to the hilt for Easter! It's a joy to see those photographs.

I hope every one had time to do the egg hunt 😊

I have been enjoying my healing, just getting stronger every day. The study I was part of took away a lot but it gave back too. I am in remission and it is wonderful.

I love visiting your coves and the peaceful feeling here is recuperation on a social front as well. I enjoy, respect and appreciate all of you.

I have been so busy myself and haven't been able teed regularly. If I get this other job I applied for, I will be here less at least through the tourist season.

I am not quitting. I think a rumor got started because I would have posted it here or emailed those whom I know.

I have not posted anything on my updates or on my wall which I find overly dramatic and laughed when I read through the rules that the owner felt the same way, haha.

@novrain62 I would speak with you first of any decision of that magnitude. I have invested monthly in the creatures and would not just toss it for no reasons given. If someone or something was bothering me to consider that extreme I would seek your counsel.

I know of a few who would love to see me go, perhaps that's how the rumor started. Nothing worth going into just childish hijinks.

I am out with Shingles &/or Staph infection and am very ill. This came completely out of the blue. I wish I would have stayed out west where the air is cleaner. Seems I have been sick ever since I moved to the East Coast.

I am on a Hiatus. I don't feel like taking care of creatures right now, but all of mine are at Tims. I am about of of EC though. I don't feel like feeding coves.

I've learned that my cat is like my child. Of course he relies on me for food and water and cleaning his kitty-box. But he also relies on me to be the wand holder, Red Dot controller, and being of all head scratchies. I love him. Noone else in the family is close to him like I, and he doesn't love anyone like he does me.

Totally feel like his mom. 😊 Makes me happy to have something that relies solely on me!

I am in good spirits, my birthday is the 29th and not one card however, gifts have been a steady delivery from my gf. She said because I missed the last four years I get one every Saturday.

My good friend of 19 years got me some killer swag when she entered her Harley in a show contest. She got second place and a HUGE Trophy that sits next to her First place from last year.

She is the President of the motorcycle club i'm in and she made me the Treasurer. I ❤️ being conscious and the best pincher of pennies around.

I do miss novrain62 and wonder if there is anything we could do about internet for her and that's if she would accept it if we do come up with a master plan???

@lizymarie - I feel that way about my dogs (a german shepherd and a blind pomeranian) - animals are way awesome!

@mrsgiggles - I know it's been way long since I checked in here hahaha - i, for one, am well and thank you for asking. I can't believe how fast this summer has (almost) gone. My health is better, though my left ankle still swells daily, but infection gone. Internet is back!! My son is doing well over in S.Korea, though I miss him and has recently gotten engaged. Next month he will turn 27. Soon he'll have 4 years in the Air Force. Where does time go? Hope this finds you well!!

@mighty-lair - we folks (lol) need to check this thread more haha - I forget to look in all honesty!! Thank you for your kindness!! Wow, a motorcycle club, cool. My mother used to put on poker runs to help her mentorship program; fun. I love Sturgis Bike Week. Have you ever gone? Congrats to your friend, btw.

To the rest of you .... What's shakin??? Can you believe summer is almost gone and school is almost in?

@novrain62 *laughs* Here we're just entering Summer ([yeep]!) and since yesterday is sooooooooo hot *pouts* But at least, vacations are coming. That's something.

About news, my son, and my daughter in law are travelling. Already were at New York, and, at the moment, they are at Honk Kong. Later, they'll go to Japan and China. Yeah, picture me envious *grins*
My DIL is a professional photographer, so you can imagine the sheer amount of pictures and videos I'll be watching when they come back.

My month long Holiday was to have some fun but mostly house search and for the most part... hmmm, what won't get the big Yeep? I'll try:

Realtor's did not hear a word I said and even showed me a couple houses that squatters wrecked!?!

In one day I looked up houses on my own and found one I may be interested in but if I get any crap I'm going back to renting. I do not want to be on this mountain for winter.
The drive alone is exhausting its 4 hours one way to look in areas I want to live in.

Realtor's = bleepity bleeps of the Clan McBleeps
Me and my Shotgun = Exhausting but fun adventures 😊

I love to people watch and love loud rock and roll and like to watch bikers and their chicks haha

I LOVE TACOS; fish tacos from San Diego and indian tacos from Pine Ridge Indian Reservation where my late husband was from mmmm - course, i'll eat tacos anywhere haha There's a great little mexican restaurant (Authentic, mind you) right down the road a mile. It is fabulous!

curry - yuk hahaha but my mother loves it. it's okay with coconut milk, though

@novrain62 I usually prepare different kinds of meat: fish, veal, lamb, chicken and pig, and then, sauces: lots and lots of sauces and different veggies to fill the tacos. Which are homemade too. Because I'm just crazy as that 😋

I love to eat good food. I use to sit at, Tapas bars in Napa or have Champagne (sparkling wine, not in France) at Mums and overlook the vineyards.
I have some spectacular memories of the meals. Private invitations from the wine makers. OMG, they would bring their private wines (trying to outdo each other I'm certain) and there would be about 10k to 20k in wine on the table. I was spoiled.
I could always tell if there was a Howell Mountain grape used in a bottle and being a newb to the industry it always impressed them.

Cooking however... I wish I had the love to do it because I know I love the results. I envy you guys!

Loud Rock N Roll, oh yeah! This remix/rap/crap stuff, not gonna happen. Half the dances makes me think "omg, get a room." And that's from just forgetting its the weekend and being at a Casino. I hate to think what I'd see at a club. "FETCH, EYE BLEACH... NOW!"
